3 eggs
1 cup salad oil
2 cups sugar
2 tsp. vanilla
2 cups shredded zucchini
1 8 1/4oz. tin crushed pineapple
3 cups unsifted flour
2 tsp. soda
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 cup chopped walnuts (optional)
Beat eggs and blend in oil, sugar, and vanilla. Continue beating until thick and foamy. Stir in zucchini – sift in dry ingredients, add to batter. Add nuts if desired. Bake at 350* for 1 hour

Sorry, this was a typo on my part. That would be One 8 1/4 oz. tin (can) of pineapple.
