Individual Egg Omelet

“Rob calls it ‘special eggs!'”

This is quick and easy and somehow tastes different to fried eggs.

Prepare 1 egg in a comp or bowl. Beat it with a fork. Add salt and pepper. SECRET!!!! add only about 1/2 tsp. water. Beat it a moment.

Use a small fry pan if possible – 6-8″ base is the best. Heat the pan with 1 Tbsp. of butter or margarine for each egg. Don’t let margarine turn brown or it spoils the appearance. The pan must be very hot.

Fry the omelet then turn it. This can be left in a pancake shape or can be rolled. Rolling keeps them hot and then can be served easier. A piece of bacon or slice of cheese rolled in is nice too. Use extra margarine for each egg.
