Raisin Pie

1 1/2 cups water

1 3/4 cup washed raisins (seedless)

1/2 cup sugar

2 Tbsp. flour

1/4 tsp. salt

2 tsp. grated orange rind

1/3 cup orange juice

1 Tbsp. margarine

 

Heat water and raisins – simmer 1o minutes. Combine sugar, flour, salt and add to hot mixture. Add orange juice and rind and margarine; cook until thick and clear – about 3 -4 minutes. Cool and pour into unbaked pie crust. cover with top crust or lattice the top with strips. Place in very hot oven for 10 minutes and reduce to 350* for 30 minutes or less. Serve with ice cream.
