Coconut Pie

2 cups milk

3/4 cup sugar

1/2 cup biscuit mix

4 eggs

1/2 cup butter

1 1/2 tsp. vanilla

1 cup coconut

Combine milk, sugar biscuit mix, eggs, butter and vanilla in a blender. Cover and blend 3 minutes on low speed. Pour into a greased 9″ pie pan. Let stand about 5 minutes. Sprinkle with coconut. Bake 350* for 40 minutes.
