Cherry Pie Filling – for pie cherries

4 lbs. (10 cups cherries) pitted

1 1/3 lb. (2 2/3 cup sugar).

6 Tbsp. minute tapioca

bring 1/2 the sugar and fruit to a boil for 1 minute. Add tapioca and rest of the sugar, boil for another minutes. Process in jars 10 minutes.

Comments:

I put a tsp. of lemon juice. If you wish it some thicker, you could add a little more tapioca (use your own judgement) we found this makes a delicious cherry pie.
