Apple Amber

Crust:

2 Tbsp. margarine

1/2 cup graham wafer crumbs

2 Tbsp. brown sugar

1/4 tsp. Cinnamon

Apple Filling:

2 apples

1/4 cup water

1 egg yolk

Meringue:

1 egg white

2 Tbsp. sugar

Stir graham wafer crumbs, sugar, and cinnamon and press into buttered pie plate. Mix apples, water, and egg yolk in put and cook for 10-15 minutes. Beat into pulp and place into crust. Whip up egg white to form soft peaks; beating in 1 Tbsp. sugar well. Add rest of sugar and beat until shiny. Cover apple mixture with meringue. bake for 10-15 minutes at 350*.
