Raisin Tarts

“This recipe was passed down to me by my mother.” – Inez Smith

2 cups raisins

1/4 cup margarine

3/4 cup brown sugar

2 eggs – beaten

dash salt

2 tsp. canned milk

1 tsp. vanilla

 

Pour boiling hot water over raisins and let stand for 5 minutes. Drain, add margarine, brown sugar, eggs, salt, canned milk and vanilla. Mix well. Spoon mixture into tart shells, fill tart shells 3/4 full. Bake for 20 -25 minutes at 375*

Yield 12 med. sized tarts
