2 1/2 cups seedless raisins
1/2 cup sugar (or to taste)
2 Tbs. corn starch
3/4 cup water
3 Tbsp. lemon juice
1 tsp. vanilla
Cookie Mixture:
1 3/4 cup sifted flour
1/2 tsp. salt
3/4 cup butter or margarine
1 cup brown sugar
1 1/2 cups quick cooking rolled oats
Rinse raisins, place in sauce pan with sugar and cornstarch, mix well, add water and stir until thickened. Add lemon juice and cook a few minutes more. Add vanilla and let cool.
Preheat oven to 350*
Sift and measure flour, resift flour with salt and soda added. Cream butter and sugar together – add flour mixture and oats. Mix until crumbly. Spread half into a 13x9x2″ pan. Spread raisin mixture over this. Top with remaining crumbs. bake 35-40 minutes. Cut into bars.
