Coconut Diamonds

6 Tbs. butter or margarine softened

1/4 cup granulated sugar

1/4 tsp. salt

1 cup sifted flour

2 eggs

1 tsp. vanilla

1 cup brown sugar

2 Tbsp. flour

1/2 tsp. salt

1 cup flaked coconut

1/2 cup coarsely chopped nuts

Cream together butter, 1/4 cup sugar. and 1/4 tsp. salt. Stir in 1 cup flour. Pat onto bottom of 9x9x2″ pan. Bake at 350* for 15 minutes or til lightly browned.

Meanwhile, beat eggs slightly, add vanilla. Gradually add 1 cup brown sugar beating just until blended. Add 2 Tbsp. flour and 1/2 tsp. salt. Stir in coconut and walnuts. Spread over baked layer. Bake 20 minutes longer or until a toothpick comes out clean. Cool and cut into diamonds. Makes 1 1/2 dozen.
