Fried Rice

2/3 cup uncooked rice

2 Tbsp. cooking oil

1 tsp. salt

1 1/2 cup boiling water

1 bouillon cube – beef or chicken

2 tsp. soy sauce

1 medium onion – chopped

2 stalks celery – chopped

1 green pepper – chopped

1 cup diced cooked pork

 

Cook rice in hot oil until golden brown. Add salt, water, bouillon cube,  and soy sauce. Cover, cook 20 minutes. Add rest of ingredients and 1/4 cup more water; if necessary. Cover tightly. Cook 10 minutes more.

Yield 4 servings
