Hot Dog Relish

1 doz. green peppers

1 doz. medium onions

1 doz.  medium green tomatoes

1 cup salt

4 cups vinegar

6 cups sugar

1 tsp. dry mustard

1 tsp. all-spice

1 1/4 tsp. red pepper

 

Grind the peppers, onions, and tomatoes in the food chopper. Salt down with 1 cup salt for 4 hours, then drain.

Place vinegar and sugar in a saucepan and when boiling, add the chopped vegetables and spices. Boil for 10 minutes and seal at once in hot canning jars.  This makes about 7 pints
