Celery Relish

1 cup onion

1 cup cucumbers

1/4 bunch celery

 

send through food chopper  the onion, cucumbers and celery.

 

1/4 red pepper

1/4 green pepper

 

chop finely the peppers.

 

Place all in a large bowl and sprinkle with 1/4 tsp. salt. Let stand for 1 hour.

Add 1 1/2 cup sugar and 3/4 cup vinegar.

Simmer until vegetables are cooked.

Mix:

2 Tbsp. and 2 tsp. flour

1 tsp. Tumeric

2 tsp. celery seed

2 tsp. mustard seed

 

Blend with vinegar until a runny paste. Add paste, stir and cook 10 minutes. Pack and seal in hot sterilized jars.
