Fricasse De Galinha (Portugese Chicken)

1 chicken – cut up and cooked (boiled, fried, etc.)

Molho (sauce)

Boiled rice

Cook 1 cut up chicken the usual way. Either by frying, or if boiling fowl is being used, brown floured chicken, cover and cook til tender. Remove to serving plate.

 

Molho

2 egg yolks

2 Tbsp. chopped parsley

Juice of one lemon

Mix well, add to fat and gravy in pan. Cook and stir til thickened. Do not allow to boil and curdle.

Serve over boiled rice with the chicken.

Deep fried onion rings

green salad
