Don’t Peek Chicken!

Use Uncle Ben’s long grain rice; 1 1/4 cup cooked in salted water until tender but not mushy. Drain and rinse with cold water until water runs off clean.

Line a baking dish with foil and butter foil well.

For the chicken and rice dish, place the portions of the raw frying chicken on top of the rice.

Pour over this, 1 can cream of mushroom soup and 1 cup milk; 1 can cream of celery soup and 1 can of milk. Sprinkle 1 pkg. of onion soup mix on top and cover tightly. Bake for 2 1/2 hours in a moderate oven. DO NOT PEEK!

Serve with tossed salad and rolls; glazed carrots and/or green beans.

** This line was written in the middle of the recipe “(if you desire to serve the rice as a side dish – take a wet clean cloth and heat it in the oven for 15 minutes.) ” but I am not entirely sure what you would do with the cloth and the rice.
