4 cups Kellogg’s corn flakes – crushed (should make 2 cups)
1 tsp. paprika
1 egg
3/4 cup milk
3/4 cup flour
1 1/2 tsp. salt
1/4 tsp. pepper
1 tsp. poultry seasoning
6 chicken pieces (breasts or legs and thighs)
3 Tbsp. butter or margarine, melted
1. Mix together crushed corn flakes and paprika. Place in a shallow dish and set aside.
2. In another shallow dish beat together egg and milk. Add flour, salt, pepper and poultry seasoning; mix until smooth.
3. Dip chicken in batter, then coat with crumb mixture. Place in a single layer, skin side up, in well-greased or foil-lined shallow baking pan. Drizzle with melted butter.
4. Bake 350* for about 1 hour or until chicken is tender.
Do not cover pan or turn chicken while baking
Yield 6 servings
Suggestions: Different herbs and spices may be added to batter or crumb mixture.
