Spinach Lasagna

1 onion

1 clove garlic

2 Tbsp. olive oil

1 lb. ground beef

1 can sliced mushrooms – do not drain

1 can tomato sauce

1 can tomato paste

2 tsp. salt

3/4 cup watre

1 egg

1pkg frozen spinach

1 cup cottage cheese

parmesan cheese

1/2 pkg. lasagna cooked and drained

1 pkg. mozzarella cheese – thinly sliced or shredded

 

“Salute garlic and onion in olive oil.”  (lol)

I think she meant to say: Saute’ garlic and onion in olive oil. Add ground beef and break apart; cook until brown. Blend in mushrooms with liquid, tomato sauce, paste, salt, oregano and water. Simmer for 15 minutes.

Mix egg, spinach, cottage cheese, parmesan cheese, remaining olive oil and salt. Pour half of sauce into baking dish and cover with half of lasagna. Spread all the cottage cheese mixture over the lasagna, then cover with remaining sauce and top with slices of mozzarella cheese.

Bake at 350* for 20 minutes.
