4 large short ribs of beef
2 Tbsp. fat or salad oil
1 medium onion, minced
1/4 cup vinegar
2 Tbsp. brown sugar
1 cup ketchup
1/4 cup water
3 Tbsp. Worcestershire sauce (optional)
1 tsp. prepared mustard
1/2 cup diced celery (optional)
2 tsp. salt
Brown ribs on all sides in fat. Combine remaining ingredients in a bowl. Pour mixture over browned ribs. Simmer in 325* oven for nearly 2 hours.
