Lemon Butter

6 eggs

1/4 lb. butter

1 lb. sugar

the rind and juice of three lemons

 

Beat eggs, butter, sugar, rind and juice of lemons. Mix together and set in a pan of hot water to cook. Very nice for tarts or to eat with bread. I’ve used almost for 30 years.
