Overnight Buns

Set yeast at almost 5 p.m.  and let rise 10 minutes

1 pkg. yeast

1/2 cup warm water

1 tsp. sugar

Mix the following and then add yeast mixture:

1 cup sugar

3 cups warm water

1 cup lard

1 tsp. salt

8 or so cups flour or enough to make soft dough

Knead until satiny. Let rise 2 hours. Punch down. Let rise again until double in bulk. Then roll into  small buns about the size of an egg. Cover and let rise until morning. Bake at 375* for about 10 minutes.

yield 90 buns.
