2 1/2 Tbsp. butter
3 eggs
4 tsp. baking powder
1/2 tsp. cinnamon
1 cup milk
1 cup sugar
3 1/2 cups bread flour
1/2 tsp. nutmeg
1 tsp. salt
Cream together the butter and half of the sugar. Add other half of sugar to eggs and beat until light. combine mixtures and add sifted dry ingredients alternately with the milk to make a dough just stiff enough to roll out. Slightly more flour may be needed but care should be taken not to mix too stiff as doughnut dough has a tendency to remain sticky. Cut with floured doughnut cutter, fry until golden brown in 375* fat. For best results, doughnuts should be turned only once in frying. If not thermometer is available, fat should be hot enough to brown a bread cube in 60 seconds. The doughnuts should rise to top immediately when dropped in.
