Fluffy Pancakes

1 cup flour

1 cup milk

2 tsp. baking powder

1/2 cup oil

2 eggs – separate the eggs and beat the whites stiff – add 1 tsp. salt

 

Beat egg yolks and then add other ingredients. Fold in egg whites. Bake on a hot griddle.

Yield servings for 4

 

* I used the dough the next morning and they weren’t soggy.
