Rhubarb Bread

1 1/2 cup brown sugar

2/3 cup oil

1 egg

1 cup sour milk or buttermilk

1 tsp. baking soda

1 tsp. vanilla

2 1/2 cups PLUS 2 Tbsp. flour

1 1/2 cup diced fresh rhubarb

1/2 cup nuts

Combine and mix all of the ingredients. Divide into two loaf pans (9″) Mix 1/2 cup sugar and 1 Tbsp. cinnamon. Sprinkle half on each loaf. Bake at 350* for 45 minutes.
