Pumpkin Bread

3 1/2 cups sifted flour

2 tsp. soda

1 1/2 tsp. salt

1 tsp. cinnamon

1 tsp. nutmeg

3 cups sugar

1 cup vegetable oil

4 eggs

2/3 cups water

2 cups pumpkin

Nuts and/or raisins (optional)

Beat eggs, add water, oil and pumpkin; mix well. Make a hole in flour mixture and add wet mixture; blend with mixer until well blended. Pour into 2 well greased and floured loaf pans and bake at 350* for 1 hour (or until toothpick comes out clean). Cool slightly in pans then turn out onto rack.

*Bread should be better the second day and freezes well.
