1/2 cup shortening
1 cup white sugar
Grated rind of one lemon
1 1/2 cups flour
Pinch of salt
2 tsp. baking powder
2 eggs – well beaten
1/2 cup milk
Cream shortening and sugar. Add eggs one at at time and mix well. Combine baking powder, salt and flour. Add milk and flour and mix well. Then add rind of the lemon. Bake 45 minutes at 350*. Mix juice of 1 lemon with 1/4 cup sugar and spoon over the loaf when hot from the oven. (More lemon juice may be added to the batter for more flavor).
