High Energy Muffins

1/2 cup whole wheat flour

1/2 cup soy flour

1/2 cup wheat germ

1/3 cup powdered milk

1 tsp. salt

2 tsp. baking powder

3 Tbsp. brown sugar

1/3 cup chopped nuts

1/3 tsp. ground mace or nutmeg

3 Tbsp. oil

1 egg

optional – drained blueberries or orange rind may be included for variety

 

Mix all the ingredients together at one time. Fill greased muffin tins 2/3 full and bake approx. 20 minutes. (There is no temp. given but I would suggest 350-400* depending on your oven)
