Dessert Gingerbread – “Desert Gingerbread”

Sift enough flour to make 1 1/2 cups

1 tsp. baking soda

1/4 tsp. salt

1 tsp. ginger

**Sift together three times **

Cream 1/3 cup shortening until light and fluffy. Add 1/2 cup sugar gradually, beating after each addition.

Add 1 unbeaten egg, beating briskly. Add 1/2 cup molasses.

Mix with dry ingredients, beating until smooth. Stir in 3/4 cup boiling water.

Turn out into greased loaf pan. Bake 30-4o minutes at 350*

Yield 8×8 pan

This is also good with whipped cream or frosted. Also, may add nuts to the recipe.
