Barbecued Short Ribs of Beef… er… Pork?

So fall is on its way and I can feel it in the air. I am a BIG Fall lover and can’t get enough Football (GO DOGGERS!, BOOMER SOONER! & GO CRIMSON STORM!) In case you have no idea who I am rooting for, this would be our local high school football team, the Dewey Bulldoggers; of course the local college team, the University of Oklahoma Sooners and last but not least, Southern Nazarene University’s Crimson Storm. I must cheer for them since this is where my baby boy attends college. Did I mention that I am so stinkin’ proud of that boy????

Anyway, back to fall. I love, love, love fall. Not only for football but it is the end of the usually long, hot and often miserable summers that we have here in Oklahoma. And that also means it is cool enough to actually “COOK!”

Tonight I thought I might take advantage of a cooler day and make up some (hopefully) luscious ribs! I didn’t have any beef ribs (they were not on sale and I didn’t have a coupon and I am thrifty, ya know?) so we will have to settle for pork ribs.

Before I get started though, I do need to credit my daughter (whom is also precious and has a very proud momma) with the lovely Paula Deen Salad Dressing doohickey that she bought me for my birthday. This lovely little gadget came in quite handy for mixing up this divine BBQ sauce. No mess, no fuss and FAST!

The recipe is:

Barbecued Short Ribs of Beef

 

 

 

 

 

4 large short ribs of beef

2 Tbsp. fat or salad oil

1 medium onion, minced

1/4 cup vinegar

2 Tbsp. brown sugar

1 cup ketchup

1/4 cup water

3 Tbsp. Worcestershire sauce (optional)

1 tsp. prepared mustard

1/2 cup diced celery (optional)

2 tsp. salt

 

 

 

Okay…. I had to flour these babies and add some seasoning salt for good measure THEN I could

Brown ribs on all sides in fat.

 

 

 

 

Combine remaining ingredients in a bowl.

Here is where I used my snazzy little gadget from my incredibly beautiful daughter – OH wait! Now that I think back, this gadget was not only from my daughter, it was also from my precious son and my buddy, Juno!

 

 

 

 

Pour mixture over browned ribs.

 

 

 

 

Simmer in 325* oven for nearly 2 hours.

And I am learning that an hour into this is where you need to go do something else because the smell is making me crazy with hunger and I might just start droolin’ or just forget the rest of the cook time because I am starvin’!

I bailed 30 minutes early and I have to tell you, this is an AMAZING recipe… I am wishing I had done more than 4 ribs. Seriously. AMAZING.
