I wasn’t too sure about this recipe.
1. the husband is not too inclined to eat casseroles and
2. The original recipe was full of backtracks, zig-zags, and afterthoughts
but who can resist a challenge in the kitchen? NOT ME! I have edited the recipe and published it.
So here goes:
Beef Garden Casserole
1 lb. Hamburger
1 med. onion – chopped
1 tsp. salt
pepper
1 can tomato soup
1 can green beans
1 can corn
1 1/2 – 2 cups mashed or sliced cold potatoes or Biscuit dough
Shredded cheese of choice
Fry hamburger, onion, salt and pepper until nicely browned. Add to this the tomato soup, beans, and corn. Place in a greased casserole. Top with sliced or mashed potatoes, or biscuit dough. Sprinkle well with cheese. Cover (*unless using dough and then leave uncovered – baking at 425* for 3o minutes) and bake at 350* for 30-40 minutes.
Dough:
1 cup flour
1/2 tsp. salt
2 Tbsp. lard or shortening
Milk or water
Serve with a tossed salad.

My thoughts:
Fry the hamburger, onion, salt and pepper until nicely browned.
Add to this the tomato soup, beans, and corn.
Place in a greased casserole…
Top with sliced or mashed potatoes, or biscuit dough.
I chose to go with biscuit dough and honestly, would double this recipe in the future to I could cover the whole dish.
Sprinkle with cheese – and bake.
This was super easy! Great for new cooks and kids (with adult supervision) and when a fast meal is needed. Also, you could be very creative and imaginative in what you put in this- sausage, other vegetables, low fat cheese, etc.
Best part? It was delicious and the husband loved it!
